Vegetarian Thanksgiving

Last week we celebrated our annual Vegetarian Thanksgiving.
Each year around the holidays, we've had the same small group of our closest friends come together to have some Tofurky with us! This year's menu included the Tofurky roast served with brussel sprouts, fingerling potatoes, and onions, corn casserole, Brazilian pan con queso (or called pan de yuca) with cranberry sauce, an amazing asian salad, and smashed potatoes.

Our favorite marinade is made with EVOO, soy sauce, and fresh sage.
Everyone couldn't get enough of the pan con queso! Great appetizer. :)

Sadly, we had to celebrate during the week due to everyone's crazy schedules so there was a lot less wine this year.

Can't believe one will have a baby in a few weeks and the other will be married in less than 1 week!
We also did a Secret Santa gift exchange. We used a great site called Drawnames.com to pick the names and set the price point (the site even lets you fill out a wish list)!

I'm so thankful for this tradition. Kind of crazy that next year there will be an additional attendee...baby Martinez!
It's insane that Christmas is just over 3 weeks away. Hope you get some lovely time with friends and family throughout this holiday season.
